CSA Week 9: Eggplant, zucchini, and tomatoes. Oh my!

Wow, can you believe I almost forgot to post this? We picked up our CSA distribution this week on Sunday, on our way home from Long Island. It had been a long car ride, we were all tired, and we had lots to do when we got home. But don't worry, I still took a picture!

Here's what we got this week:
  • 6 ears of corn (yummy, for the first time of the CSA corn)
  • 4 cucumbers
  • 2 (or was it 2.5?) lbs of mixed squash, including ZUCCHINI!
  • 4 eggplant (we could have chose some chard instead)
  • 1 bunch tatsoi (we could have picked a green pepper instead...no way!)
  • 4 onions
  • 4 lbs (or was it 5?) of tomatoes
  • Plus you-pick stuff:
  • 2 pints cherry tomatoes
  • 3 serrano peppers
  • Green and yellow beans (we just got a few)
  • Miscellaneous herbs, we got regular and Thai basil, mint, and thyme
I'm finally making pickles this week. The first step is done and they're currently in the fridge sitting in salt. Sarcastic yum. I'm following the recipe mentioned on Boston Dish, although freely making changes. Like adding the garlic suggested in the blog entry. Non-sarcastic yum!

We are trying new pickles this week too! Dill pickles, no vinegar involved, just salted water. Will keep you posted how they turn out! Have fun with all your goodies!
